The music in Dungeon Siege was excellent. I'd have to say my favorite soundtracks are Oblivion, Arcanum, LotR, Max Payne (esp. the second theme song), and Stronghold (mainly Crusader, but 1 and 2 had good music too).

Some examples:
"Behold, the power of stupidity!" (after I/a friend/anyone do(es) something stupid
"ORC FURY!!!!!!!!" (before entering berserk mode)
"AW CRAP!" (after something bad happens)
