If I remember correctly, proper Melnibonéan riding-dragons have some kind of anatomical protrusion that makes them easy to ride. I can't remember where the saddle goes though. Edit: Rereading, that just sounds wrong somehow. I can't be bothered rewording, so just trust me - I did not mean this post to be more appropriate on the other topic.
