I thought sodium nitrate was an explosive, but apparently sodium nitrite a preservative.

Nitrates can serve as explosives as well as fertilizers, ergo the "fertilizer bomb," which Tim McVeigh used in Oklahoma City. It's another area where Homeland Security is failing, though in their defense, fertilizer sales would be almost impossible to regulate.

EDIT: I'm not sure how sodium nitrite is different, but I'm pretty sure it acts as a preservative in Spam. Most processed meats use it though (especially hotdogs).
