Why all my characters restores the life normally in life polls, and not restores de essence in essence polls?

Probably (if I understand what you are saying), because you have essence that has been "spent" on a creation. This essence cannot be regained until the creature has died or you have absorbed it.

Ah- pools... now I understand.

Also, if you're playing a higher-level shaper, you might experience the same problem, especially with an overabundance of essence.
